What can I do to prevent genital herpes from a person who I know is infected?

There isn't much you can do to help prevent getting it, your partner has to take some responsibilities to help prevent you from getting herpes.
Herpes is more likely to be passed on while there are any signs or symptoms but there is a small chance of passing it on when there is no sign of a break out.
If she takes antiviral medication regularly, avoids intercourse while she has any signs or symptoms of a break out and you can use condoms in between her break outs. If you do all of that then you have less then 5 percent per year chance of getting herpes.
If it's too much risk for you to handle then you may want to consider moving on. Herpes is a permanent virus with out a cure.First off, kudos for not running away when she told you. It was a very difficult thing for her to do.

That being said, avoiding penetration is not your only concern. Any sort of contact in the area that she had her initial outbreak is a risk that you take. This includes your mouth as well as genitals. Caution and common sense, despite hormones and the heat of the moment (and your ability to resist), are what you will prevent you from catching herpes from her. She should know when she has an outbreak and BEFORE the actual outbreak. She will be contagious prior to any signs of an blister. I would give it a day or two after as well. If she has genital herpes, you can get oral herpes by bringing those two body parts together. However, if she is understanding and willing to become intimate, as long as she doesn't have oral herpes, you are safe while she contacts any susceptible part of your body (mouth, genitals and anus). You may also safely become intimate with her using you fingers.

I never trusted condoms. They can break and it's just not worth the risk. The medication only reduces the number outbreaks that she has and the duration of an outbreak. My wife took acyclovir but stopped as the number of outbreaks didn't really warrant it.

You might want to know how many outbreaks she has in a year and how long they last.
